Foil-packet dinners keep preparation simple after a long day outdoors. They reduce dirty dishes, though you’ll still need to pack out used foil.
Ingredients
For each serving: sliced fully cooked smoked sausage, thinly sliced potatoes, onion, bell pepper, a little butter or oil, garlic powder, pepper and smoked paprika.
Method
- Use heavy-duty food-safe foil and seal each packet securely, leaving room for steam.
- Place over moderate coals or on a grill where fires are permitted. Turn carefully with tongs.
- Cook until potatoes are fork-tender and all ingredients are thoroughly heated. Time varies with heat, thickness and packet size; do not rely on a fixed 20-minute promise.
- Open away from your face to avoid steam burns.
For raw meat substitutions, use a food thermometer and cook to the appropriate safe internal temperature. Refrigerate perishables until needed.
